Successful Conclusion of Our 21 Day Fall Challenge

We successfully concluded our 21-Day Fall Challenge on Sunday, 10/31!

Thank you to those who participated during the month of October. We appreciated all the positive feedback and encouragement!

Testimonials and Accomplishments:

Goal: 5 servings of veggies (1/2 cup = 1 serving)

One person swapped their regular french toast for a veggie omelet to make sure she got her veggies in that day. She decided to alternate between french toast and the veggie omelet. “The veggie omelet was filling and satisfying – I felt fuller longer! After the french toast, I usually wanted to go home and take a nap!”

Another participant prepared a butternut squash soup in the crockpot, a recipe they had been wanting to try. The challenge encouraged them to make the grocery list and a trip to the store for the ingredients. “I have been eating more salads, I love salads. With the soup and salads, I definitely get my 5 servings of vegetables!” 

Bonus Achievements:

All our participants increased their physical activity (walking or jogging) during the challenge. One person started walking 10 minutes 3 times per week! Another started jogging and committed to getting back to the gym, and a third person walked almost daily with a friend or family member!

One person said: “This wasn’t a goal, but I found that I started walking more and felt better. The walking helped me think clearer about eating healthy and being healthy. I even lost weight!”
